Turn the midi into visuals? Maybe through keyboard commands?

Hi again,

Big apologies for all the questions - it's just all pouring out of me right now! This question is about how one might use the MIDI from MidiSprout to make visuals rather than sound. Has anyone tried this, and what might be some good programs to use for this? (Mac or PC is fine, but I generally work on Mac).

I imagine TouchDesigner might be a good one but it isn't something I am super familiar with at this stage.

Another potential way to do it might be to run a program that turns the MIDI signals into keyboard presses, so that I can set up visuals in an outside program to play on keyboard presses. Does anyone have any experience with this? I found these softwares but I'm not sure if I am on the right track:
